It didn’t take long for Kirsty Foynes and Kevin Nowlan to hit on their idea of a small, eco-luxury getaway — in fact, it struck on their first date.

“We’ve both always had a bit of wanderlust,” Kirsty says. The couple chatted about their travels, and places they’d stayed in, and Kirsty mentioned she’d love to set up a “boutique B&B” in Greece. Kevin’s eyes lit up, she says. He’d been thinking of a similar concept, only based on an adventure resort on the River Shannon.
